Founded in 1818 by the original owners Nicolas Francois Billecart and Elisabeth Salmon, Billecart-Salmon are one of the most revered producers in the Champagne region. The house remains family-owned and most of the grapes come from a small but prestigious vineyard holding in the Ay region.
Meticulous production techniques from the use of their own cultured yeast to its long, slow, cool fermentation, ensure that the family has 100% control of production. Billecart-Salmon’s Nicolas Francois Billecart was first released in 1964 as a tribute to the house’s founder, and represents a blend of 60% Pinot Noir and 40% Chardonnay, 10% of which is oaked. Only released in favourable vintages, the resulting wine is imparted with additional texture and complexity, yet retains an abundance of elegance and finesse. Notes of almonds, dried dates, grilled chestnuts, lime and white blossom feature on a broad, enticing nose. Sublimely balanced and deliciously crisp, richly layered flavours of biscuit, caramelised stone fruit, apple, hazelnut and herbs can be found on a superbly silky palate. Whilst drinking beautifully now, this is an immensely rewarding champagne to drink over the next two or three years and beyond.
