Cedric Bouchard is regarded as one of the fastest rising stars of champagne. Having started his own label as recently as 2000, and with only 1.37 hectares of vines, he has quickly earned a reputation as champagne’s most talented new wine producer. Bouchard embraces a revolutionary philosophy towards making champagne; he seeks to create individual wines of great character each year from single vineyard bottling’s. All the vineyards are farmed organically, and they boast some of champagne’s lowest yields. The wines are produced with no dosage with the aim of allowing the unique terroir of each wine to show. Inflorescene Blanc de Noirs NV is made from 100% pinot noir – somewhat of a rarity for champagne. The grapes are hand harvested, crushed by foot and fermented using indigenous yeast. The finished wine is bottled unfined and unfiltered, thus imparting the wines with maximum expression. A sophisticated and complex nose displays notes of lemon, apple, wild flowers and minerals, whilst the palate displays great power, richness and exoticism. Finishing with great length and depth, this is a truly wonderful example of grower champagne that offers outstanding value.
