Established in 1914, Salon today represents one of the rarest most sought after wines in Champagne. This legendary Champagne House, situated in Le Mesnil-sur-Oger in the Cote des Blancs district, produces only one wine; Champagne Cuvee ‘S’. Eugene Aime Salon, the perfectionist and founder of this house, had a dream of producing the ‘Perfect Champagne’ and knew that he needed the best vineyards of the area and the best possible grapes to make a wine of finesse and depth. Until today the Champagne ‘S’ is only made from the Chardonnay grape sourced from vines with an average age of 50 years from the 6.2hectare vineyard called Le Jardin de Salon (Salon’s Garden) and from 19 other smaller parcels- all of which were chosen by the founder himself. Although still youthful, this 1999 release is lively but still discreet, showing white blossom, brioche and bitter almond notes on the nose. Weighty and powerful in the mouth, with firm acidity and a primary tight character, the mousse is creamy and beautifully silky, broadening out in to a sensationally long finish. This rare magnum release comes beautifully presented in a bespoke wooden presentation box and will continue to evolve over the next 20 years and beyond.
