The French know how to take simple ingredients and to make them into something really special. Prime example is the traditional dish of rillettes – shredded meat (often pork or duck) preserved in a tasty paté like dish.
Le Canard et la Lune has taken this a step further and made something truly sublime! Their trio of rillettes make a great flight of canapés, allowing your guest to taste each and find their favourite.
The ducks themselves are very well looked after. They are certified PGO – sourced from ‘the’ place for ducks in France – Les Landes (recognised as IGP Les Landes).
They are free range, allowed to happily roam in the open air day and night, and are reared for a minimum of 102 days (it is only 65 days minimum for Free Range status). They are fed crops of local, Non GM certified, maize and wheat, all of which creates a more mature, long fibre meat. When being processed, they select only the finest pieces, and trim by hand. Made in small batches, only the finest pure duck fat is used, and a sous vide method is employed to retain flavour with its more gentle process.
The trio contains the Original Duck Rillettes, Duck Rillettes With Herbs and Pink Garlic de Lautrec (AOC) and Duck Rillettes with Piquillo Pepper.
