Pathfinder is roasted to highlight the incredible terroir of its coffees. Last spring Origin Coffee travelled to the Carmen Mill owned by Fernando Alfaro in El Salvador. Fernando invited them to cup a large selection of coffees his mill had been dry and wet milling for producers all over Ahuachapan and they discovered some incredible lots. They decided to use Fernando’s coffee from the Carmen farm, located on this hill side of the country near the mill. It’s covered in shade trees that restrict the amount of energy the coffee trees can take from the sun. This ensures that the cherries slowly ripen causing them to take on a deep sweetness that translates to a complex and vibrant cup. The black honey process that this coffee underwent adds an incredible vibrancy, along with a deep and lush stewed berry sweetness to the blend.
To accompany Carmen, they selected a coffee lot that was produced by Fernando’s mother-in-law Edith Eleonora Lemus at Espana. The incredibly sweet and vibrant flavours of this coffee captivated them and work incredibly well in Pathfinder, exhibiting flavour notes of honey, berries and caramel.
