Often referred to as a Japanese pancake, Okonomiyaki is a mix of flour and flavouring such as yam or prawns (it can vary), and you add an egg, shredded cabbage, a bit of the red pickled ginger if you like, and whichever main ingredient you like. Common choices are bacon or prawns. It is a classic Japanese favourite dish
Once cooked, turn on to a plate, and smother with Okonomi Sauce and Kewpie mayonnaise. Then sprinkle with nori (little flecks of green nori seaweed, also available). Eat with chopsticks if being authentic.
This sauce is the traditional accompaniment to Okonomiyaki, but can be used as a normal dipping or brown sauce. It goes particularly well with eggs or a bacon sandwich, sausages or crumbed or grilled cutlets.
