Established in 1914, Salon represents one of the rarest most sought after wines in Champagne. This legendary champagne house, situated in Le Mesnil-sur-Oger in the Cote des Blancs district, produces only one wine; Champagne Cuvee ‘S’. Eugene Aime Salon, the perfectionist and founder of this house, dreamt of producing the perfect champagne and knew that he needed the best vineyards and the best possible grapes to make a wine of finesse and depth. Until today the Champagne ‘S’ is only made from the chardonnay grape sourced from vines with an average age of 50 years from the 6.2hectare vineyard called Le Jardin de Salon (Salon’s Garden) and from 19 other smaller parcels- all of which were chosen by the founder himself. Salon Champagne Blanc de Blancs 2002 was aged for 11 years on its yeast before being disgorged and released. The champagne shows complex aromas of lilac, minerals, sliced lemons, apple and white pepper. It is full-bodied and dense, yet racy and agile with a lightness and freshness. Rich on the finish with a slight hint of minerals, this is one of the greatest Salon vintages of recent years and will age superbly over time. A wonderful addition to any wine cellar, this is a highly collectable release that will no doubt soar in value.
