Gilles and Nathalie Fèvre met at university where they both qualified as oenologists. Gilles' great grandfather began growing grapes and making wine in and around the village of Fontenay-Près-Chablis over a hundred years ago. Today, they own 40 hectares of vines - all planted on Kimmeridgian limestone - throughout the Chablis region. The finest possible grapes are grown with a fastidious, environmentally conscious approach to quality, obtaining lower yields and adopting a scrupulous selection. The resulting wines are beautiful expressions of classic Chablis; fine, concentrated, pure, steely and minerally. The Premier Cru of Mont Milieu is one of the best known sites in Chablis, situated on a prestigious slope in the heart of the best area. Golden yellow in colour, this wine displays an elegant and discreet nose reminiscent of green apples, wet pebbles, elderflower, honey and biscuit. In the mouth, a wonderful combination of richness and minerality are set against a deep complex backdrop of savoury flavours and crisp refreshing acidity. The lengthy finish displays great finesse and style with an evolving savoury flavour profile. An immensely impressive example from a relatively unknown producer, this wine would pair excellently with white flesh fish and oysters.
