A Jerez sherry house established in the mid nineteenth century, up until now the wines of Emilio Hildago have remained one of the area’s best kept secrets. Key to the outstanding excellence of the sherries produced is a complex system of very old soleras (dating back to 1871) along with a contempary company philososphy that views sherry as table wine as opposed to “fortified” wine. Whilst still, rich, dark and full bodied, this is a somewhat atypical rendition of the Pedro Ximinez grape that poseesses restraint, elegance and finesse. Abounding with flavours of figs, dates, dark chocolate and coffee this has a notable pureness when compared to many of its varietal counterparts which works brilliantly well with food matches such as chocolate puddings, ice cream or strong blue cheeses.
