Classic Bruschetta is made with bread toasted over hot coals. The bread is then rubbed with an open clove of garlic and after that peppery Italian extra virgin olive oil is poured over which gives you the bruschetta base for your favourite toppings.
It's fantastic for serving with drinks before a summer’s evening meal or instead of a starter. You can do it the authentic way on hot coals or the next best thing is a cast-iron ridged griddle pan, although toasted bread is also great.
