The Japanese Sansho Pepper is not actually related to the pepper family, but from the prickly ash plant. It is similar to Szechuan pepper, but with a more pronounced lemon flavour. The earthy, tangy flavour has a slight tingling taste on the tongue, and it is also one of the ingredients in the well known Shichimi chilli spice mix. Traditionally served on grilled foods such as yakitori (chicken) and unagi (eel), it is a versatile spice. Use to flavour noodles or miso soup, or combine with salt and herbs to create a crust for fish or meat.
