Shochu is a traditional distilled Japanese spirit, which can be produced from a wide range of base ingredients and consequently differs incredibly in flavour from one example to another. This example is made from the highest quality of barley, and diluted (to 25% ABV) using fresh spring water from Yufu in the Oita region of Japan. Subtle and elegant in style, the nose shares some similarities with sake, with suggestions of apple, white blossom and almond. Dry, refined and restrained on the palate, aspects of minerality are suggested - set against complex, savoury, textural nuances. Typically enjoyed straight, on the rocks, or mixed with both hot and cold water, this example can be combined with a light tea or fruit juice – or acts as a versatile cocktail component.
