Tazaki's Katsuobushi (also known as bonito flakes) is dried, shaved tuna and a key Japanese cooking ingredient. It is used in the making of dashi stock - along with kombu seaweed - and is the basis of most miso soups.
It can also be used on top of okonomiyaki, the Japanese ‘pancake’ - topped with kewpie mayonnaise, okonomi sauce (similar to bulldog tonkatsu sauce) and a sprinkling of green nori seaweed.
It is also commonly served on noodles, or the Japanese dish of tofu, spring onions and a light soy based sauce.
