The new Palmas range from Gonzalez Byass is comprised of wines of exceptional quality. Each has an intense colour and concentrated Fino character gained through extensive solera ageing. Since the 1880s Gonzalez Byass has used the Palmas system to classify its highest quality Finos. The traditional ‘palma’ chalk mark was made on the barrel to indicate wines of exceptional finesse and delicacy of aroma with the youngest wine given ‘una palma’ up to ‘cuatro palmas’ for the oldest and rarest casks. After careful selection by winemaker Antonio Flores, these wines have been drawn from casks in tiny quantities and are bottled unfiltered and unclarified. Fino ‘Tres Palmas’ is a fine and rare ten year old Fino that has been selected from the very small number of barrels still retaining a thin veil of flor after a decade of ageing. This additional ageing produces a fino of atypical character; deeply coloured, full bodied and deliciously developed. Aromas of hazelnut, walnut, toffee and dried apricots are suggested on a compelling and characterful nose, whilst the palate is dry, rich and broad with layers of flavour and immense intensity. An outstanding sherry that is delicious on its own or when paired with cheese plates and intense game dishes.
