Fino 'Dos Palmas' is an eight-year-old Fino selected from the small number of Fino casks still retaining a delicate layer of Flor at this age. This is slightly more intense than the 'Una Palma', with weightier and more accentuated flavours of nuts, dried fruits and brioche. Beautifully textured and complex, with a long and refined finish, this would make a splendid match with lighter pork, chicken and tuna dishes.
Since the 1880s, Gonzalez Byass has used the Palmas system to classify its highest quality Finos. The traditional 'palma' chalk mark was made on the barrel to indicate wines of exceptional finesse and delicacy of aroma with the youngest wine given 'una palma' up to 'cuatro palmas' for the oldest and rarest casks. After careful selection by winemaker Antonio Flores, these wines have been drawn from casks in tiny quantities and are bottled unfiltered and unclarified.
