Wooing Tree's "Blanc de Noir" represents something altogether different and quite unique. Although technically a white wine, Blondie is actually made from 100% hand-picked Pinot Noir grapes, grown on the family owned vineyard. The atypical Champagne colour is the result of minimal skin contact between the grapes and juice prior to a gentle whole bunch press and stainless steel fermentation. On the nose this wine shows attractive aromas of ripe peaches and cream, with stone fruit, pink grapefruit and a hint of honey whilst the palate is softly textured and beautifully balanced with an elegant delivery of flavour and a complex mineral backbone. An unconventional but delicious release, this would make a delicious aperitif or be good served with a wide range of seafood dishes.
