The fig was one of the first plants to be cultivated by humans. But the fig leaf has always been rather overlooked relegated merely to covering the modesty of those who find themselves without underwear in the statues and oil paintings of history. But no more as Audemus Spirits has elevated the fig leaf to new heights in the Cognac-based Covert Liqueur.

Miko - the man and the science behind Audemus Spirits - was introduced to fig spirits via his father who grew up in Tunisia and enjoyed a drop of the local Bhoukha. Miko now lives in Cognac where fragrant fig trees grow abundantly among the vineyards and gardens. The inspiration came to him while sheltering beneath a fig tree in a botanical garden in the small town of Pons. It was spring and the tree had plumped its leaves with aromatic sap and heated by the sun they were releasing exquisite aromatics. And there it was that eureka moment: a green fig leaf and brandy digestif… ‘un Cognac Vert’… Covert Liqueur.

Fig leaves are hand-harvested air dried and gently roasted at the local bakery and the restaurant around the corner. Along with spring honey and a little cane sugar these aromatic leaves are added to 10-year-old Cognac Grande Champagne that has been redistilled under vacuum to isolate the nutty and rancio flavours. The outcome is sensational: all wild musky aromas and flavours of fig jam roasted almonds cognac-soaked raisins and granary toast spread with wildflower honey.

Inspired by the terroir of Cognac this suave richly perfumed and very grown-up liqueur can be sipped neat after dinner – with or without ice. Alternatively try stirring 15ml of Covert Liqueur with 10ml of Cocchi Americano 20ml of Martell Cordon Bleu and ice. Then simply add a twist of lemon for a delectable pre-dinner cocktail.
