Contrasts: Organic was distilled in 2012 matured in virgin American oak and bottled in 2020. Its fruit-driven profile is bang on trend at the moment. Accredited by the UK Soil Association from the barley to the bottle it’s packed with flavours and aromas of ripe peach freshly grated orange zest crunchy green apples dried banana chips vanilla yoghurt Werther’s Originals a turn about the herb patch and that coffee cocoa and cream combo you find in tiramisu. This is a pioneering quality-orientated distillery specialising in handmade Scotch. They like to joke there are four ingredients that go into their whisky: the finest barley grown and malted to their specifications water from the Chapelton Spring in the Romach Hills yeast and the distillers who make it happen. It’s often described as a pre-1960s style Speyside style meaning that it’s beautifully balanced with a touch of smoke. Each handcrafted release is produced in a traditional manner using Scottish barley grown locally and malted with just a little peat smoke double distillation in copper pot stills and maturation exclusively in expensive first-fill Bourbon and Sherry casks.
