This wine from Pieter H. Walser’s BLANKBottle has evolved over the 12 years since he first made it but it remains his most loved and most successful wine. What started out as a Chardonnay Chenin Blanc and Viognier blend has become a study of three blocks of Chenin Blanc in Wellington – called Boberg Spogblok and Draai-Draai (also great names for children if you’re in the market) – with just a splash of Grenache Blanc and Viognier. Boberg is ancient bush vines on top of a mountain Spogblok’s old vines create incredible fruit when the sheep don’t eat them all and Draai-Draai adds immense intensity. Predominantly organic fermented in a combination of French oak amphora and concrete egg-shaped tanks using natural yeast and aged on the lees for a year; it feels like a modern classic. Tangy lemon curd baked apple tropical mango cream and flint; this voluptuous wine swaggers across the palate like it was born to be there. Allow yourself some peace and quiet because this is a wine that deserves your full attention.

Pieter Hauptfleisch Walser is probably one of the coolest guys on the planet. He’s a man who doesn’t know how to label himself. Winemaker IT guy marketer négociant surf dude punk artist polymath… he’s all these things and more. He’s complicated much like his wines which also don’t give much away by their labels. His story began with a customer who came to see him and said she wanted to buy anything but Shiraz because she wasn’t a fan of that particular grape. He listened to what kinds of things she preferred and ended up serving her a Shiraz that he hadn’t labelled yet. She loved it and went away with three cases. From there on Peter decided not to provide too much information on his labels so that the wine will be judged on just the quality and the way it tastes. He sometimes makes 30 different wines a year half of which are one-offs never to be repeated. He travels all over the Western Cape uncovering an eclectic array of grapes and wines he’s even made a blended wine by hooking himself up to an electroencephalogram (EEG) machine and measuring his emotional response to the taste of the components. His honest and experimental approach to winemaking has garnered him a cult following and listings everywhere from Chiltern Firehouse to Nobu and of course at the OXO Tower.
