Lightly chilled Manzanilla and big, juicy green olives; one of life’s little pleasures and the ultimate aperitif.

This is no ordinary bottle of Sherry. Pastora – meaning ‘shepherdess’ – was the very first Manzanilla to grace the market in bottled form, way back in 1827. Bodegas Barbadillo resurrected this iconic brand in 2014 and create true Pasada En Rama in the old style, matured using a solera system* full of well-aged Manzanilla. The traditional bright-yellow label is a rendering of a tile design embedded in the wall of one of Barbadillo’s bodegas, the only remaining trace of the original brand’s existence.

The wine in this cute half bottle is around eight years old, although you’d never guess by its freshness and energy. It spends around six years in the solera system at Manzanilla Solear in Sanlúcar de Barrameda, before being moved to La Pastora, where it’s aged for another couple of years before release. It is bottled En Rama, meaning ‘raw’, without fining or filtration, making it both natural and vegan friendly. Sunrise gold in colour, it’s remarkably smooth, but packs a hefty punch of yeast, toasted hazelnuts, crisp green apple, salted butter, bitter herbs, chamomile tea and dry Madeira.

Pastora loves to accompany tapas, salty nibbles like anchovies or Marcona almonds, pickles and seafood; but the ultimate pairing is with a selection of our bestselling Perello Olives Picante, which is why this gift set includes two different varieties, plus a pair of glasses to serve your Sherry in. 

The first are Perello Gordal Olives, which are grown in Álcala de Guadaira y Utrera, Seville. These large olives have an intense, juicy flavour, are firm textured and pitted. The second are Manzanilla Olives, the most popular type in Spain, served as table olives throughout Andalucía and beyond. These plump and firm green olives have a meaty texture and a delicate bittersweet taste.

* A complex way of maturing not just Sherry, but also rums, brandies and vinegars. The solera system is a series of barrels with the oldest on the bottom and the youngest on the top. Sherry is bottled from the bottom row, that row is then topped up from the next oldest on the level up and so on up the system, the gap at the top is then filled with new Sherry. This fractional blending ensures continuity and consistency, but also that the youngest wine have less influence.
