Las 30 del Cuadrado Old Vines Palomino 2016 is a rare unfortified white wine made by the world-famous Sherry house Bodegas Hidalgo La Gitana. The grapes were harvested from a 30 acre (12 hectares) plot of untrellised 70-year-old Palomino vines in the much-loved coastal estate they call El Cuadrado. This is the same vineyard that the wonderful Manzanilla Pasada Pastrana comes from. Las 30 del Cuadrado is fermented in old Manzanilla Pasada Pastrana Sherry casks and left to mature in contact with the yeasty lees for six months. Made in tiny quantities each vintage this is a truly unique white wine for those who like to explore and lovers of Manzanilla.
The full-bodied white is deeply saline it speaks of crashing waves oyster shells olive brine and oily salted Marcona almonds. There’s quince jelly lemon zest pine needles fresh flowers chamomile hay and wild herbs. It’s unlike any other wine you’ll ever taste. Consider pairing with tapas rice dishes nibbles seafood and salads scattered with green olives and capers.
