Sandro Bottega Fumé was lovingly crafted from Glera grape pomace the remains of the grapes left after the juice has been squeezed out to make Prosecco. These rich and perfumed skins are popped into a bain-marie within a traditional copper alembic and are distilled. The vacuum inside and the indirect heating preserve the delicacy and the aromas of the grapes. The grappa is then aged in freshly made and intensely toasted oak barrels for 12 months. This smoking of the wood gives the grappa its name and imparts a gorgeous wisp of woodsmoke which combined with the warming nature of grappa is almost reminiscent of sitting next to the fireplace.
