During the 1980s Álvaro Palacios travelled all over Spain selling French barrels, secretly looking for the perfect site to make Spain’s finest wine. He settled on Priorat and his wines l’Ermita and Finca Dofi shot to fame. However, his second choice was Bierzo, where he and his nephew make the biodynamic Pétalos. Having worked at Château Margaux and for Moueix who own Pétrus, Ricardo Perez is a legend in the making too. Sourced from 60-year-old vines, this is bursting with value and violets, raspberries, plums, redcurrants, cedar and dried herbs. We adore sipping this with a charcuterie platter, mature cheeses, game stews, pink lamb or roasted root vegetables.
