Japanese Gin


The distillery’s name may tell you that this isn’t a Japanese Gin in the truest sense. However, it does bring the aromatic subtlety of Japanese cuisine to your palate via a pair of scientifically minded distillers in Cambridge.

Cambridge Distillery’s Japanese Gin is crafted using six botanicals, each of which are distilled separately under vacuum to isolate the fresh and lively flavours. Obviously there’s juniper for the legal reason of needing to call it a gin, then there’s shiso (a herb in the mint family that’s used widely in Japanese cuisine for everything from noodle garnishes and tempura to making receptacles to hold wasabi), sanshō (the berry of the Japanese prickly ash that has a lemon flavour and the tongue-tingling hotness of Sichuan pepper), yuzu (a sweet-sour citrus fruit that looks a bit like a knobbly grapefruit), toasted white sesame seeds and smacked cucumber.

The result is an award-winning gin of refined elegance. Verdant, citrusy and refreshing, with just a little warmth of ginger and peppery juniper. Although wonderful mixed with a premium tonic water, our favourite way to sip this is in an ice-cold Martini alongside sushi or sashimi.
