It tastes like the kind of fruit you scrump from hedgerows on a summer day, juice dribbling down your chin. There’s also something about it that makes us convinced that this is what Inspector Montalbano pours a glass of when he sits down on his terrace with a bowl of pasta at the end of a long day. So fix yourself some cavatelli freschi alla norma or pasta ‘ncasciata, and settle down to a glass of this bright, young red.
Cantine Paolini’s environmentally friendly vineyards are cooled by winds sweeping in off the ocean, they fertilise with organically grown herbs and legumes, and everything is picked by hand, which is highly unusual for a cooperative.
