Chanel made No.5 a household name. With this fabulous Champagne Ayala might do the same for No.7.
No.7 is the second release from the Collection Ayala a series of unique cuvées only released when they reach their peak. Created using grapes (two thirds Chardonnay and the remainder Pino Noir) from seven Grands Crus (Chouilly Oger Avize Cramant Le Mesnil-sur-Oger Aÿ and Verzy) all harvested in the 2007 vintage it has spent eleven years maturing in the bottle before being riddled and disgorged by hand. The result is sensational displaying notes of toasted almonds sourdough red apples lime sorbet plum crumble with ice cream nectarines roasted in Sauternes and honey greengage mint leaves and dried apricot. Anybody receiving this Vintage Champagne will soon understand the significance of the lucky number seven.
With a history dating back to 1860 Ayala is one of the original twenty-six Grandes Marques and was one of the key pioneers of the dry modern style. The great house in Aÿ was given to Edmond de Ayala as a wedding present and remains the beating heart of this great Champagne. Although still a family-run business Ayala is now owned by Bollinger leading many to consider this as Bollinger’s lesser-known and therefore slightly more exclusive little sister.
