After five years of tumultuous conditions, 2017 was a beautiful harvest for the Pillots. So, following in the footsteps of his grandfather Fernand and father Laurent, Adrien made his winemaking debut at the estate, having spent three years working in Côte-Rôtie, Oregon, South Africa, Australia and New Zealand.
Fernand & Laurent Pillot’s Chassagne-Montrachet comes from five parcels on limestone-rich soils. Fermented in oak barrels, it then continues to age there for around a year. What comes out is round with perfectly integrated woody spices, crisp green apple, juicy peach and spring blossom. Think buttery gnocchi dishes, seafood and freshly caught fish.
Clearly a man who knows how to multitask, when Laurent Pillot isn’t making this wine or taking care of his family, you might find him flying his microlight or his hawks, or maybe even conducting the local brass band. He recommends that you can enjoy this wine “at the end of your meal… with cheese.”
