Fernand & Laurent Pillot’s elegant Chassagne-Montrachet Premier Cru Les Vergers is one for the citrus lovers. Out of all the wines that the Pillots make, this has the highest acidity whatever the vintage. That results in lots of fresh grapefruit, lemon peel, crunchy red apple and blossom flavours. Although it’s a full-bodied white, it feels like a breath of fresh air with every sip.
Following in the footsteps of his grandfather Fernand and father Laurent, Adrien Pillot now runs the winery at this much-loved estate, having spent three years working in Côte-Rôtie, Oregon, South Africa, Australia and New Zealand.
