Following in the footsteps of his grandfather Fernand and father Laurent, Adrien Pillot now runs the winery at this much-loved estate, having spent three years working in Côte-Rôtie, Oregon, South Africa, Australia and New Zealand.
Fernand & Laurent Pillot’s Chassagne-Montrachet comes from six parcels on limestone-rich soils. Fermented in oak barrels, it then continues to age there for around a year. What is drawn from those precious casks is elegant and round with perfectly integrated woody spices, lemon peel, ripe apple, poached pear, smoky toast, buttered baguette, juicy peach and spring blossom. Think buttery gnocchi dishes, seafood and freshly caught fish.
Clearly a man who knows how to multitask, when Laurent Pillot isn’t looking after the picking team at harvest time or taking care of his family, you might find him flying his microlight or his hawks, or maybe even conducting the local brass band. He recommends that you can enjoy this wine “at the end of your meal… with cheese.”
