One of our favourite new ingredients, Sea Truffle, is a seaweed gathered from British rock pools and beaches. Combined with Churchfields Saltworks’ pure brine salt, it creates a partnership that can do unreal things to seafood dishes, not to mention steaks or roasted vegetables. The truffle of the sea seems to heighten the saltiness, transporting your taste buds to the stern of a boat cutting through crashing waves and sea spray. The gentle smell of seaweed conjures up childhood holidays and adds incredible depth to your favourite dishes. Michelin star chef Brad Carter suggests mixing it with butter and rubbing it into a whole head of cauliflower before roasting it.
The multi-award-winning Churchfields Saltworks lovingly harvest their incredible salt by hand from one of the oldest and purest brine springs in the world – one that has existed beneath the spa town for millions of years. The quality of salt from Droitwich was internationally recognised back in the mid-19th Century and the industry has now been revived by locals Will and Gillian Kerton.
