Canadian Gayle Seale is the Global Brand Ambassador for Foursquare – “the world’s best rum distillery” according to The Telegraph newspaper and the four-time consecutive winner of the International Spirits Challenge’s “Rum Producer of the Year”. Formerly a teacher and photojournalist, Gayle married Foursquare’s Master Distiller Richard Seale, and became part of Barbados’ most famous rum family. Her passion, her well-travelled Converse sneakers and her catchphrase – “this does not suck” – have made her a rum icon, and few have done more to promote and protect the integrity of Bajan rum than she.
That’s why the fedora-wearing Ian Burrell – the world’s only Global Rum Ambassador, the founder of UK Rumfest, the former owner of Cotton’s Caribbean restaurant in London, and, according to Difford’s Guide for Discerning Drinkers, “the most entertaining guy you’ll ever meet” – invented a cocktail in Gayle Seale’s honour. The exquisite drink he created brings together some of Gayle’s favourite things; her go-to Doorly’s XO Rum (made at Foursquare of course), the classic Daiquiri and one of Barbados’ favourite cocktails, Corn ‘n’ Oil. When asked about it, Gayle told us: “I am so honoured to be featured in such a refreshing and fun Ian Burrell cocktail. I might be a little biased, but it does not suck.”
We can very much vouch for that. And soon, you’ll be able to too. This Gift Pack contains almost everything you need to create the perfect Gayle Seale Daiquiri. Just grab some limes and sugar syrup and fill the ice cube trays. Then, simply shake together 50ml of Doorly’s XO Rum, 25ml of fresh lime juice, 15ml of John D. Taylor’s Velvet Falernum (also made at Foursquare), 5ml of sugar syrup*, three dashes of Angostura Bitters and lots of ice. Strain it into a coupe and garnish with a twist of lime peel. Created by a legend, to honour a legend, using a legendary rum. It was never going to suck.

- John D. Taylor’s Velvet Falernum, 11%, 700ml
- Angostura Bitters, 44.7%, 200ml
* If you wish to make your own sugar syrup, add equal volumes of sugar and water to a saucepan and heat it gently until the sugar dissolves. Let it cool and keep it in a glass jar in the fridge for up to a month.
