"Affinato 15" Traditional Balsamic Vinegar of Modena DOP 100ml
Traditional Balsamic Vinegar of Modena DOP is the fine wine or premium spirit of the vinegar world. It has to be produced purely from cooked grape must and those grapes must come from designated varietals grown in the Modena region. It must legally be aged for at least 12 years, which is incredible considering that Champagne only requires 15 months and Scotch only three years. Gocce’s "Affinato 15" Traditional Balsamic Vinegar of Modena DOP surpasses the legal requirement having been aged for 15 years. Maturation takes place in a series of barrels called a “batteria”, which are made of different woods (for example oak, mulberry, ash, chestnut, cherry, juniper and acacia) and gradually decrease in size. Each year the vinegar is racked from one barrel to the next in the series, adding more wood influence and more complexity. The result is a masterpiece of bittersweet perfection, which can be drizzled on practically any savoury or sweet dish – think anything from carpaccio of meat or vegetables to ice cream and summer strawberries. Each 100ml bottle comes with a cork pourer so no precious drops will be lost.
Exclusive to Harvey Nichols, the Gocce Italiane brand is at the very forefront of Modena’s balsamic scene. Combining traditional processes that date back to the 17th Century with innovative flavour infusions, they create balsamic vinegars, condiments and glazes for the most discerning of palates. Sticky, bittersweet and aged in wooden barrels for durations that can stretch up to 50 years, these products are the very pinnacle of Aceto Balsamico di Modena.
