"Extra Vecchio 30" Traditional Balsamic Vinegar of Modena DOP 100ml
Traditional Balsamic Vinegar of Modena DOP is the fine wine or premium spirit of the vinegar world. It has to be produced purely from cooked grape must and those grapes must come from designated varietals grown in the Modena region. To be labelled “Extra Vecchio”, it must legally be aged for at least 25 years, which is incredible considering that Champagne only requires 15 months and Scotch only three years. Gocce’s “Extra Vecchio 30” Traditional Balsamic Vinegar of Modena DOP surpasses the legal requirement having been aged for 30 years. Maturation takes place in a series of barrels called a “batteria”, which are made of different woods (for example oak, mulberry, ash, chestnut, cherry, juniper and acacia) and gradually decrease in size. Each year the vinegar is racked from one barrel to the next in the series, adding more wood influence and more complexity. The result is a masterpiece of bittersweet perfection, which can be drizzled on practically any savoury or sweet dish – think anything prosciutto or caviar to cheesecake. Some even go as far as to sip it after dinner for its digestive properties. Each 100ml bottle comes with a cork pourer so no precious drops will be lost.
