Tasting Notes
Awarded 92 points by the experts at Decanter Magazine, this sweet wine from Greywacke (pronounced ‘grey-wacky’), is deeply honeyed and seriously impressive.
Imagine apricots drizzled with honey, elderflower cordial, marmalade and orange water, baked in the oven and garnished with crumbled honeycomb. This will be served on a dessert platter alongside crème brûlée, tarte tatin, quince jelly and cup of lightly smoked tea. That’s exactly what Greywacke’s Botrytis Pinot Gris 2015 tastes like. Serve alongside dessert – you might find inspiration within the tasting note above – or maybe a cheeseboard or pâté and toast.
Fermentation for this wine took place in old oak barrels, 60% of which were allowed to spontaneously wild-ferment, which adds even more richness and depth to the shrivelled raisin-like botrytis grapes. As if that wasn’t enough, it was then left to age on the lees for nine months, imparting a wonderful creaminess. This is not just a sweet wine, it’s a labour of love. But what more would you expect from the man who put New Zealand Sauvignon Blanc on the map, and who made Cloudy Bay a household name throughout the world.
