We searched the length and breadth of the British Isles for the perfect partner to create this tonic and found Claire Rennie in the tiny Aberdeenshire’s parish of Pitsligo. Her company, Summerhouse Drinks, are masters of their art, growing many of the botanicals used in their own walled garden and using no artificial colours, flavours, sweeteners or preservatives.
