The Harvey Nichols Buying Team were blown away by the quality of this sparkling wine from Hattingley Valley. There’s barely a Demi-Sec – either from these shores, Champagne or further beyond – that can hold a candle to it.
The touch of sweetness perfectly balances that classic English acidity and makes it a wonderful partner for pastry-based desserts like tarte aux pommes, Christmas treats such as stollen and mince pies, and special occasion breakfasts with croissants or cinnamon buns.
The attention to detail that winemaker Emma Rice has put into this Demi-Sec is phenomenal. The base wine was aged in old Burgundy barrels for five months, then, after the second fermentation in the bottle, it matures for a further three years before disgorgement. All that time spent on the lees – or dead yeast – imparts a creamy richness and nutty pasty notes reminiscent of crumble topping, which perfectly complement the caramelised apple, lemon curd, brown sugar, and summer berry fruit flavours. This vegan-friendly stunner hails from the chalky soils of Hampshire and should not be missed.
