Having spent more than six years ageing on the lees – more than double the requirement for Vintage Champagne – this Rosé 2007 from House of Arras is an exceptional sparkling wine. Elegant and vinous, it fills the air with summer berries, strawberries and cream, cherry blossom, pink grapefruit, spiced biscuits, brioche, amarena nougat and something umami reminiscent of wild mushrooms on sourdough toast drizzled with truffle oil. We highly recommend pairing this with food, particularly roast quail, seared tuna steaks or those wild mushrooms on sourdough toast drizzled with truffle oil!

Having amassed hundreds of trophies and gold medals over the last quarter of a century, House of Arras is Australia’s most awarded sparkling wine producer and rivals Les Grandes Marques of Champagne. James Halliday, Australia’s most famous wine critic, rates it as a five-star winery and notes: “While there have been distinguished sparkling wines made in Tasmania for many years, none has so consistently scaled the heights of Arras. The complexity, texture and structure of the wines are akin to that of Bollinger RD and Krug.”

Born in England, Ed Carr moved ‘Down Under’ at the age of eight. Racking up 34 years of experience in the industry, 27 of which have been focussed primarily on sparkling wine, this “quietly spoken genius” has, in the words of James Halliday, become “by some considerably distance Australia’s greatest sparkling winemaker.” Sourcing outstanding fruit from Tasmania’s finest cool-climate regions, employing the same method used in Champagne and maturing their bottles for an inordinately long time, House of Arras creates wines that are renowned for their complexity and depth.
