RyeLaw is an innovative new whisky made from 53% malted rye and 47% malted barley. It can’t be called a rye whisky because there is currently no legal definition for that in Scotland. So, it was crafted adhering to the rules for American rye whiskey instead. It has just been featured in the fifth edition of Ian Buxton’s 101 Whiskies To Try Before You Die, with the writer calling it “whisky’s future” with “new levels” of flavour.
InchDairnie use a hammer mill to break down the rye grains and carefully chosen rye-specific yeasts for fermentation. RyeLaw is the only whisky in the world to be made with rye and precision distilled in a Lomond Hill still. It was matured in new charred oak barrels that are traceable back to specific forests, before being filled into a bottle designed by a Paris-based agency called Chic (which we think tells you all you need to know about that). Pour a dram and discover rye bread toast and spicy pepper mingling with notes of custard cream biscuits, granola packed with dried fruit, vanilla-laced crème brûlée and mellow oak. The rule-breaking RyeLaw is law unto itself, and very much a whisky for those in the know.
InchDairnie is the brainchild of distillery founder Ian Palmer. The name means “hidden land close to water”. If you want to find this secretive enterprise, it’s near Kinglassie in Fife, which is about 30 minutes north of Edinburgh. This innovative and privately-owned distillery began making whisky on Christmas Day in 2015 and has been pushing the boundaries of flavour ever since. Although only in its infancy, it has already captured the imagination of some of the most trusted voices in the industry. For example, the award-winning writer Dave Broom has said, “In terms of flavour innovation, other distillers will be looking at InchDairnie Distillery for years to come.”
