Lei Sapphire Label Semi-Sweet Junmai Ginjo Sake 720ml
Katsuyama’s Lei is the sake for wine lovers. Brewed using Hitomebore rice that’s polished down until just 55% of each grain remains, it’s reminiscent of a Riesling Auslese – that phenomenal combination of rich mouthfeel, powerful concentration, refreshing acidity, smooth texture, complex aromatics and off-dry sweetness. It takes immense skill to create an aromatic Junmai Ginjo sake of this weight and character, with an alcohol level comparable to wine.
Sipping it chilled right down reveals flavours of banoffee pie, peach juice, dried apricots, candied lemon peel, pastry, cracked peppercorn, nutmeg and just the faintest whiff of petrol. It’s hard to imagine a more food-friendly sake; consider pairing it with prosciutto, salty cheeses, desserts, spicy dishes, the rich, dense flavours of slow-cooked stews and sauces or the sweet and umami combo of Chinese food, yakitori, unagi or barbeque marinades.
Lei is named after the wagtail. In some branches of Japanese mythology, this little bird is credited with creating the land we live on and the sea that surrounds us on behalf of the gods. It’s also the official signature of Date Masamune, a one-eyed warrior and leader who founded the city of Sendai, where Katsuyama Brewery is located.
Katsuyama Brewery – the name meaning “victory mountain” – has been making supreme sake since 1688. Originally brewing for the feudal lords and samurai of Sendai, they have been serving the upper echelons of society ever since. Renowned for the food-friendly umami quality of their rare sake, they only create a single tank per week. These are the fine wines of the rice wine world, so we recommend sipping Katsuyama’s sake chilled from a wine glass with food.
