Fukukomachi Hidden Glade should be treated with the same reverence as a fine wine of twice the price. Crowned the “Champion Sake” at the International Wine Challenge in 2012, it has become a hallmark of the Kimura Brewery and a benchmark for all others.

Crafted from Yamada Nishiki, the king of sake rice, which has been polished to 40%, meaning that 60% of each grain has been painstakingly milled away. This unleashes all the wonderful, exotic and complex aromatics of melon, pineapple, mango, lime, green apple, cucumber, sweet honeysuckle, spice and bergamot. The palate is full, rich and silky smooth with nectarine and peach notes, but also a seasoning of sweet spice. This is a truly exceptional Daiginjo sake to be savoured lightly chilled for special occasions with loved ones. Alternatively, run away to a hidden glade and enjoy it all yourself.

Kimura Shuzo was established in 1615 by a high-ranking samurai family. Based in Akita Prefecture, the bitterly cold and mountainous north of Japan’s main island of Honshu, this brewery creates award-winning sake using the purest water and the finest rice. For over 400 years they’ve concentrated purely on refining the taste of their products, without ever resorting to automated systems, machines and new-fangled technology. So, what you will taste in each bottle of Fukukomachi – the brewery’s prestige brand – is a handmade and traditional process honed over four centuries by masters of their art.
