Sh?ch? translating roughly as “fiery spirit” is one Japan’s most exciting beverages but also one of the most overlooked. The Japanese consume more sh?ch? than sake each year and yet relatively little is seen on these shores. It can be produced from all sorts of base ingredients for example rice sake lees sweet potato various grains chestnuts sesame seeds brown sugar and even carrots which makes it a bartender’s dream. Not bound by all the rules and regulations that sake and whisky must conform to sh?ch? is breaking free of its reputation as simply a fire water or hooch giving rise to a new breed of craft producer. Following in the footsteps of mezcal poitín and baijiu sh?ch? is a complicated versatile and fascinating spirit that’s now garnering a cult following in the UK.

Kimura Shuzo is primarily a sake producer Awakening Sh?ch? is the only distilled alcohol that they create making it rare and very special indeed. It’s crafted using the sake lees (the spent yeast from the sake brewing process) from their top-end sakes including Fukukomachi Hidden Glade Daiginjo Sake which was crowned the “Champion Sake” at the International Wine Challenge. Fermented for several months and then distilled under low pressure in a pot still Fukukomachi Awakening Sh?ch? has an exquisite clarity like it had been plucked from a glacier or mountain stream. This super-premium spirit is smooth silky and ethereal with notes of watermelon cantaloupe caramelised pineapple mango banana guava lemon peel tangerine cream star anise clove mint dill and cress. Chilled right down it’s crisp dry and a joy to sip neat. However it’s also wonderful in cocktails. It creates an aromatic Martini when coupled with a citrus-driven gin swap it for the Cognac in a Japanese twist on the Sidecar slip it into a highball with soda water and a squeeze of lemon juice or mix up a sh?ch? gimlet.

Kimura Shuzo was established in 1615 by a high-ranking samurai family. Based in Akita Prefecture the bitterly cold and mountainous north of Japan’s main island of Honshu this brewery creates award-winning sake and sh?ch? using the purest water and the finest rice. For over 400 years they’ve concentrated purely on refining the taste of their products without ever resorting to automated systems machines and new-fangled technology.
