Shirayuki Red Fuji Cup might look like an instant noodle pot or a novelty coffee cup, but don’t be fooled, this is top-quality sake in the perfect packing for picnics, when you’re on the go, or if you just don’t want to open a full-sized bottle.
The “Junmai” title means it’s a prized premium sake, while “Ginjo” explains that the rice has been highly polished. In this case, the rice has been polished to 60%, meaning that 40% of each grain has been gently milled away. This removes some of the more umami and ricey flavours, creating something more refined and delicate. Expect aromas and flavours of flambéed banana, crisp apples and pears, lemon peel, melon, grapefruit, walnut oil and mushrooms on yeasty sourdough, and consider pairing it with gyoza, teriyaki, unagi, katsu, barbeques, Kobe beef, mature cheese or mushrooms on toast. As the sun rises in later summer and early autumn and if the weather conditions are just right, Mount Fuji appears red. This auspicious phenomenon was captured by the legendary Ukiyo-e artist Hokusai in one of his most famous woodblock prints of the iconic Japanese mountain, and that’s what has been used to decorate this sake cup.
Konishi Shuzo was founded in 1550 and today it is the oldest sake brewery to still be owned and managed by the same family. This historic producer can be found in Hyōgo prefecture, to the west of Osaka and Kyoto. This populous region is sandwiched by the sea and bustling ports, and it’s famed for its Kobe beef and Matsuba crab. As a result, the Konishi family’s sakes – of which Shirayuki is the flagship brand – pair well with a wide variety of different foods.
