The sour sweetness of outdoor-grown rhubarb is given a spicy, citrusy, almost eucalyptus-like lift with cardamom - a favourite spice in sweet Scandinavian pastries. Earthy and piquant, this is great to spread between layers of a sponge cake, to use in jam roly-poly or to eat with brioche.
London Borough of Jam was established in 2011 by Lillie O’Brien, who had spent the previous four years as pastry chef at the London institution that is St. John Bread and Wine, so she knows a thing or two about pastries, desserts, breads and baked goods. LBJ - not to be confused with America’s 36th President - handcrafts boutique preserves in small batches using seasonal fruit and out-of-the-ordinary additions. The jams are cooked for a shorter time than most others to maintain the purity of the fruit flavour, employing only natural, unrefined sugars and no commercial pectin.
