Very Rare Dair Ghaelach Knockrath Forest Single Pot Still Irish Whiskey
Representing Ireland’s most acclaimed and coveted whiskey, Midleton Very Rare Dair Ghaelach Knockrath Forest is – as stated on the label – “the pinnacle of Irish whiskey”. ‘Dair Ghaelach’ means ‘Irish oak’, and this is the third release exploring the nuances of oak grown around Ireland. For this bottling, Midleton have collaborated with the Brabazon family who look after the Knockrath Estate in the picturesque and dramatic Vale of Clara, County Wicklow. Together, they have sustainably harvested seven oak trees and sent them to Jerez in Spain to be coopered into virgin Irish oak hogsheads – a process that requires 15 months of drying and light toasting. Midelton have then taken triple-distilled single pot still whiskies that have been matured in ex-Bourbon barrels for between 13 and 26 years, vatted them together and finished it in the Knockrath Forest casks for two years.
Irish oak is not normally used for whiskey because of a lack of sustainable wood. With the recent rejuvenation of Ireland’s forests, it has now become possible. But it means that Midleton are in the vanguard and this remains a one-of-a-kind whiskey. Liquid gold, Midleton Very Rare Dair Ghaelach Knockrath Forest coats the palate with toasted wood, vanilla, gooseberry fool, lemon sherbet, apple pie, roasted coffee, Crunchie bar, pineapple, banana, pine sap, Christmas spices, golden syrup, lime zest and apricots poached in Sauternes. Prized among collectors, extremely rare and unbelievably delicious. With each new release, Midelton cements its position as Ireland’s top distillery.
