This vibrant wine-coloured spice is the magical ingredient sprinkled onto Mediterranean and Middle Eastern dishes to give a tangy citrus kick. Created from the dried berries of the sumac bush, its wonderful sour flavour can be used instead of lemon juice or simply to enhance dishes as you might with condiments like salt and pepper. As well as being one of the key ingredients in za’atar, it can be used to turn your hummus, fattoush, rubs, marinades, dressings and salted cocktail rims into some next-level culinary masterpiece. Or alternatively, we love to sprinkle it into olive oil with sea salt, and then dab hunks of bread into it.
