Throughout their history Pio Cesare has made limited quantities of Barolo Chinato and Vermouth to old family recipes handed down by their great grandfather. In the 1950s they stopped briefly as customers seemed to be more interested in liqueurs. But recently tastes have changed, as demonstrated by the meteoric resurgence of the Negroni, and so Pio Cesare has resurrected these historic and monumental recipes.

Chardonnay and the Moscato Bianco used in their stunning Moscato d’Asti are macerated with Absinthe and 26 aromatic herbs – including marjoram, gentian roots, cloves, orange zest, quinine, ginger, nutmeg and a whole raft of secret ingredients – for 15 days. The Piemontese-style Vermouth is then aged in oak barrels for four months before having burned sugar added for colour, sweetness and its unique flavour. It tastes a lot like Christmas, with huge spicy complexity, and can be used in all manner of cocktails. But it’s particularly good in a traditional serve over ice with a slice of lemon.

Pio Cesare was established in 1881 and is now run by the fifth generation of the family, Pio Boffa, with help from his daughter Federica. As one of the first producers to truly start shouting about the immense potential of the Piedmont region’s wines and one of the first to export to the UK, they have always been industry leaders. And as Wine Advocate quite rightly notes: “You have to love the energy and dynamic thinking that comes out of this historic cellar located in the city centre of Alba.”
