Providence First Drops Pure Single Rum Blanc November 2019 is natural and fruity. It practically erupts out of the glass with aromas of tart wine grapes, blackberries, fresh sugar cane, citrus and something that reminds us of walking around tropical-climate glasshouses. On the palate, it’s smooth and mellow, tasting like underripe pineapple, strawberry sorbet, brown sugar, grassy herbs and a tickle of pepper. It can be sipped neat or mixed; in a Daiquiri it’s simply superb.
Distillerie de Port-au-Prince opened in 2018. It immediately grabbed the attention of all true rum aficionados because it’s a collaboration between France’s La Maison du Whisky, Italy’s Velier and the Barbancourt-Linge family, descendants of the famous Barbancourt rum dynasty. The rum expert, Caribbean hopper, raconteur and international man of mystery, Velier’s Luca Gargano, began exploring Haiti in the 1990s, uncovering untapped artisanal rums from the pristine fields of organically grown sugar cane – most notably, Clairin. After setting up an ageing warehouse for Clairin in Port-au-Prince, it was only logical that he would build a distillery next door. But who would manage it?
That story begins in 1765, when Louis Barbancourt left Bordeaux for the French colony of Saint-Domingue, now known as Haiti. He became the owner of a sugar cane plantation and his descendants began distilling some of the finest Agricole-style rum the world had ever seen. The last member of his family, Jane Barbancourt, married a German perfume expert by the name of Rudolf Linge, who worked in Grasse. Together they launched a brand called Vieux Labbé, which is now run by their son Herbert Barbancourt-Linge Junior. He also manages Distillerie Port-au-Prince.
Distillerie Port-au-Prince is located on a site once called Habitation Sarthe Providence. So, it seemed fitting that the spirit takes the name Providence. Distilled in November 2019, this white rum is made using organic Cristalline sugar cane. The fresh juice and syrup (juice boiled down to concentrate its sugar) are fermented slowly and separately, each are then distilled in a German bain-marie batch still. These components are then blended and distilled for a second time. Coming off the still at a fiery 72% ABV, it’s reduced to 57% ABV before bottling. This might be considered overproof elsewhere, but Providence Haitian Rum Blanc is remarkably balanced, displaying immense purity and aromatic complexity.
