In 2012, the husband and wife team of Hamish and Liberty Martin – an ex-wine merchant with a first-class diploma in Herbology and a trained beekeeper with a penchant for antiques – bought a derelict plot of land at the foot of the Pentland Hills on the outskirts of Edinburgh.
