Valdespino stake a claim as Spain’s oldest Sherry bodega, with the family’s involvement in Sherry production dating back some 700 years. Unsurprisingly, practices here are ultra-traditional; fermentation in cask, extensive solera and criadera ageing and minimal intervention make these sherries some of the most authentic and integral available. Innocente is a unique expression of the Fino style, produced from the grapes of one vineyard and matured under a veil of “flor” for over eight years. The resultant sherry is pale in colour but deliciously full and aromatic, displaying savoury aromas of herbs, almond, brioche and rock salt. Impeccably balanced on the palate, with a seamless integration of nut, herb, and wood flavours and possessing outstanding weight and grip. A really exceptional example of this style which makes a sumptuous aperitif and a great match with tapas and fish dishes.
