Guffens-Heynen is the highly respected winery in Sologny started by Maine and Jean-Marie Guffens-Heynen, which makes fabulous Burgundy from grapes that they grow themselves. Domaine Verget is their négociant business that buys grapes from local growers. So, the fact that this wine could sit in the former’s portfolio is high praise indeed. But there’s good reason for that…
This wine comes from the only part of the Le Chavigne lieu-dit that Jean-Marie Guffens doesn’t own, hence the secretive name. The owner refuses to hand the vines over to the Belgian owner of Domaine Verget but, for the first time in 2018, deigned to sell him the grapes. What Jean-Marie Guffens does with them demonstrates why he wants to get his hands on this plot so badly. Vinified in oak and matured on the lees for eight months, it’s rich with baked pear, buttered granary toast, lemon meringue pie, crushed rocks, peaches and cream, and a zippy citrus freshness. serve this alongside Christmas dinner, roast chicken, baked cheese, pastry dishes and creamy sauces.
